Why Konkoe Mandi Tastes So Incomparably Authentic
Mandi is not biriyani, and it is not fried rice. Originating in Hadhramaut, Yemen, true Mandi relies on an age-old cooking art where the meat is tenderized by gentle indirect heat and smoked with pure wood or charcoal coals.

Our secret blend includes black peppercorns, cardamom pods, cumin, cloves, coriander seeds, and Yemeni dried black lime (Loomi) toasted to release natural essential oils.

We place the marinated chicken on a rack directly above the basmati rice, allowing the aromatic meat juices to infuse every grain below as hot coconut charcoal creates that authentic pit smoke.
